The cheonggukjang (fermented soybean stew) delivers a deeply satisfying umami flavor without the addition of meat or kimchi, and the namul banchan are uniformly cooked to an exceptionally soft consistency that accommodates diners of all ages. A self-service banchan bar allows unlimited refills of over eleven side dishes, including radish kimchi, seasoned vegetables, and various jangajji (pickled preserves), though regulars note the pickled items have increased in proportion compared to earlier years.
