Ongsimi, chewy potato dumplings, are made here from freshly grated potato, so each one keeps a slightly grainy bite in a lightly thick, nutty, mild broth. Gamja ongsimi kalguksu combines the dumplings with knife-cut noodles, while sun-gamja ongsimi is dumplings only, and a spoonful of barley rice arrives first, to mix with young-radish kimchi. Side plates include gamjajeon, a potato pancake that is crisp outside and chewy inside, memil jeonbyeong buckwheat crepe rolls and susu bukkumi, pan-fried sorghum cakes. When the ingredients run out, the shop sometimes closes early.
