The restaurant uses only female pork, prized for its lack of gamey odor and exceptionally tender, clean-tasting texture. Orders are set up at the table in under one minute along with a stone-pot rice bowl, and the stew is ready to eat after roughly five minutes of simmering with the lid on. A generous amount of sliced onion creates a naturally sweet base that melds with the spicy kick of kimchi and the mild savoriness of the pork, producing a unique flavor profile somewhere between a jjigae and a jjageuli. The spice level is mild enough for those with low heat tolerance to enjoy comfortably. Side dishes are minimal—just kimchi, cucumber, and garlic—but the duruchigi itself is so complete that additional accompaniments feel unnecessary. Adding extra kimchi and handmade tofu deepens the broth, and after eating a portion of the stew, topping it up with water and dropping in a packet of ramyeon noodles produces an entirely different dish with remarkable depth.
