Donsadon Byeolgwan in Nohyeong-dong, Jeju City is a Jeju black pork specialist serving geun-gogi - thick, whole-muscle cuts grilled over charcoal briquettes. The neck meat (moksal) arrives at a perfect medium doneness; biting in releases a flood of juice and a tenderness that has earned comparisons to fine beef, with many considering it the best pork they have eaten on Jeju. The five-layer belly carries more richness, beautifully offset by dipping it in Jeju mel-jeot (anchovy sauce), which is distinctly deeper and more complex than mainland versions.
