A whole chicken simmers in clear broth with potatoes, rice cakes and green onion until the meat pulls apart with chopsticks. This is dak hanmari, literally one whole chicken. Pieces go into a soy-mustard dip that adds salt and a sharp bite. Once the chicken and potatoes are gone, kalguksu noodles are added to the leftover broth and cooked as the final course. One pot is meant for two or more. The shop, formerly called Deungnamujip, is on Seoae-ro, 400m from Chungmuro Station.
