The signature gan-jajang features onions stir-fried to order, offering a natural sweetness that complements the savory black bean paste. Unlike many modern versions, the sauce remains mild and nutty rather than overly sweet or salty, accompanied by thick cuts of pork and a distinct wok char. Gan-jajang and its seafood version require a minimum of two servings, making regular jajangmyeon the choice for solo diners. The jjamppong broth is spicy and clean without excessive artificial seasoning.
