Perilla runs thick through the broth of the perilla sujebi (hand-torn dough soup), perilla kalguksu and perilla porridge, while the seasoning stays gentle. Unwrap the lotus-leaf rice and a faint aroma rises from beans, chestnuts and mixed grains; it comes with seasoned acorn jelly, and there is bibimbap as well. Among the side dishes, the potato pancake and the slightly bitter wild aster greens stand out, and they are refilled on request. The hanok-style room, set with flowers, ceramics and calligraphy, has floor seating only, and both meals and tea are made vegan on request.
