Wild flatfish, rockfish, sea bream and yellowtail from the East Sea are cut thick here by Susan Port, with a dense, chewy bite. Walk in without calling and you will sit a long while before the fish arrives, so phone an hour or two ahead. The bones and heads left after filleting go into a spicy stew; stir in doenjang and let it simmer longer for a deeper broth.
