Dakjinmi 닭진미

Since 1962 this shop at the mouth of Namdaemun Market's hairtail alley has torn boiled old hens by hand for its chicken soup, dakgomtang. The meat is chewier than in samgyetang, and the thick skin is springy enough to divide opinion, and staff will leave it out on request. Gogi-baekban, the meat set, plates the meat apart from the broth to dip in seasoned soy sauce with raw garlic.
