The signature dish is traditional brass-pan bulgogi: thinly sliced beef is heaped with scallions and bean sprouts, then simmered in broth on a hot copper plate. The seasoning is deliberately gentle — not aggressively sweet or salty — which prevents palate fatigue and creates an addictive quality that deepens as the broth reduces. Each serving is a generous 300 grams, so ordering one portion fewer than the number of diners is the standard approach. Three varieties are available: classic beef bulgogi, wagyu bulgogi, and wild pine mushroom bulgogi. The stone pot rice (sotbap) is an essential companion — the quality of the rice is outstanding on its own, and pouring water over the remaining rice at the end yields a nurungji (crispy rice crust) that serves as the perfect finish.
