Thin beef, scallions and bean sprouts are heaped in the middle of a round copper pan and simmered in broth poured around the rim. The seasoning is mild, which reads as bland if you expect sweet soy bulgogi, but the broth deepens as it cooks down, and staff top it up when it runs low. A serving is 300g, enough that groups can order one fewer than their headcount; solo diners have the bulgogi bapsang, a smaller set with pot rice.
