Chohyanggak 초향각

All the noodles are dosakmyeon, flat strips shaved off a block of dough with a knife, which gives them a firm, springy chew. The wide surface holds gan-jajang black-bean sauce evenly, so children manage it easily, and the haemul jjamppong carries sea cucumber, clams and other seafood in a broth that is spicy without going too far. Tangsuyuk follows the older style with a crisp, non-glutinous batter.
