Bread is shaped and baked by a Japanese baker in full view through the open kitchen of a small shop off Wausan-ro in Hongdae. Yakisoba-pan stuffs a soft roll with noodles, mayonnaise and sauce without feeling heavy, and the mentaiko baguette is salty and nutty. Japanese-style sweet buns such as melon-pan, yuzu red-bean bread and Earl Grey cream bread fill the shelves, with a shrimp katsu burger for something more filling. Fresh batches keep coming out of the oven through the day. There are only two tables, so most customers take their bread to go.
