When the pot arrives at the table, it is packed with clams, mussels, squid, and baby octopus to a degree that resembles a full seafood steamer rather than a noodle dish. Diners choose between a mild or spicy broth base, then scoop out the seafood first to dip in chojang vinegar-chili sauce before dropping the hand-pulled noodles into the remaining shellfish broth to cook. The thick, chewy noodles absorb the rich stock and create a flavor profile that is difficult to replicate elsewhere.
