The restaurant's most distinctive feature lies in the noodle thickness, the buckwheat noodles are noticeably thinner than standard makguksu, and when these delicate strands meet the dongchimi (radish water kimchi) broth, they produce a crisp, umami-rich flavor. The dongchimi broth is served separately in its own vessel, meant to be poured over the noodles incrementally to taste. For the bibim (mixed) preparation, diners combine the provided oil and spicy dadaegi paste, with vinegar and mustard available for further adjustment.
