Yukkuri 윳쿠리

Yukkuri means slowly in Japanese, but with lunch waits that can stretch close to an hour, the name does not quite apply. Hire katsu from the tenderloin is lean, with juice held between its fine fibers, while the loin-cut rosu katsu carries a layer of fat and eats heavier. Wasabi stirred into the katsu sauce works well, and if the rosu starts to feel rich, a pile of shredded cabbage on top helps. Water comes with lemon, and staff hand out vitamins too. The shop closes early once ingredients run out.
