Eels wait in a display case by the entrance, where diners pick a size, pay up front, and then receive the eel par-grilled to finish over a charcoal brazier at the table. Strong heat gives the salt-grilled eel a firm surface while the flesh stays moist, and salt alone does the job. A per-person table charge applies on top of the eel, and jangeo-tang, eel soup, is sold to take home.
