The signature dry-aged samgyeopsal (pork belly) is seared to a golden crust and sliced tableside - remarkably tender and juicy despite its generous thickness, with zero toughness. Gabri-sal (pork skirt) offers a leaner, nuttier counterpart that pairs well when alternated with the belly. The yangnyeom kkot-samgyeopsal (marinated pork belly) features a mild, sweet seasoning with no heat at all. A full grilling service is provided from start to finish, and staff guide diners through a recommended tasting sequence: the first piece with just salt, followed by pickled peppers and wasabi for a completely different flavor profile.
