The yangpuni galbijjim, made only with Korean pork ribs, arrives cooked from the kitchen, and staff pull the meat off the bones at the table. The aged-kimchi version, simmered down with bean sprouts and glass noodles, ends up close to kimchi jjim. Corn mayo and a house mayo sauce among the side dishes calm the heat, and leftover sauce becomes fried rice you make yourself.
