Ribs and pork shoulder arrive together, but the shoulder rivals the flavor of the ribs, so ordering extra beef is less worthwhile than focusing on the pork combination. Placing thin-cut radish kimchi on top of the meat is a recommended pairing, as is wrapping pieces in lettuce with the banchan. The small taste-portion of dongchimi-guksu has a pleasing acidity that contrasts well with the sweet ribs and can be topped up for 2,000 won. The 1,000-won doenjang-jjigae has a rustic sirae-gi quality, and simmering leftover meat and minced chili into it transforms it into a finishing dish worth seeking.
