Each order of yangnyeom dwaeji galbi (marinated pork ribs) mixes rib meat and pork neck on one plate, giving the grill two alternating textures. Only Korean-raised pork is used, and the marinade carries a gentle sweetness that never turns cloying. A small taster of dongchimi guksu, noodles in tangy radish-water kimchi broth, arrives with the meal and cuts through that sweetness.
