Taifeng 타이펑

The owner, featured on the TV show Master of Living, makes the dumplings and dim sum by hand, and ordering steamed alongside pan-fried or fried versions shows how the same wrapper changes. Beef jjamppong is a spicy noodle soup made heavier with beef, and even the jjajangmyeon (black-bean noodles) leaves a mild chili heat. For rice instead of noodles, mapa dubu bap puts soft tofu and minced-meat sauce over a bowl of rice. Glutinous-rice tangsuyuk, sweet-and-sour fried pork, has a crisp shell over a chewy layer, and dipping rather than drowning it keeps both. Yuringi, fried chicken under a tangy, fragrant sauce, gives a second fried dish a different direction. Yangjangpi, a cold mixed platter, comes with a sharp, pungent dressing best added a little at a time.
