Susanhang Mulhoe 수산항물회

Jjebok, a small clam from Korea's east coast, tastes gentler than Manila clams, and the kitchen purges it so carefully that not a grain of sand turns up among all those shells. Jjebok-muneo mulhoe puts chewy clams and octopus in a sweet-tangy chilled broth; the abalone-flounder version uses sliced flounder in the same broth. The jjebok pancake deserves a spot on the order as much as the mulhoe: thick with vegetables and clams, crisp outside, eaten with a little squid sikhae on top.
