Galmaegisal (pork skirt) and Daegu-style makchang (grilled intestine) leave the kitchen already cooked, and the briquette burner on the table only keeps them warm, so there is little smoke. The slightly sweet galmaegisal goes on top of the free, tangy jaengban makguksu, cold buckwheat noodles served to every table. Pork skin comes out soft, almost steamed, and strongly seasoned. Meals end with doenjang jjigae and rice, or a dosirak lunchbox that staff shake at the table to mix. The original building is a walk from Yongsan station, with an annex across the street; tables sit close with little space for bags.
