Spice comes in three gradations, and the middle tier is roughly equivalent to Anseong Tangmyeon instant noodles, manageable for most diners without discomfort. The makguksu (buckwheat noodles) carries a round umami that is not spicy, providing a natural counterbalance to the heat of the dak-galbi, and adding udon or jjolmyeon as a topping is a worthwhile upgrade. The established finale is using the remaining sauce and a handful of cheese to make a fried rice that closes the meal on a rich, savory note.
