Thick slices of aged pork belly hit the charcoal and release a clean, nutty aroma with no gamey edge. At the original Sharosu-gil branch of Gogi Gumneun Saramdeul, near Seoul National University Station, a three-person set covers samgyeopsal, moist moksal (pork neck) and springy hangjeongsal (pork jowl). Crisp-chewy pork rind, don-maguro-sal, cubed neck, gochujang bulgogi and beef cuts are on the menu too, along with an all-you-can-eat option. Lettuce, garlic and kimchi come from the self-service bar, and the kimchi goes on the grill beside the meat. A volcano-shaped steamed egg, kimchi stew and naengmyeon fill in around the pork. Staff explain timing and how to eat each cut, and even weekday evenings run near full.
