The kitchen uses only domestic Korean chicken thigh meat, which eliminates the off-notes associated with imported poultry and produces a distinctly tender, moist bite. Staff stir-fry the marinated chicken directly at the table, ensuring the sauce penetrates evenly and the flavors are consistent from the first piece to the last. Spice comes in three gradations, and the middle tier is roughly equivalent to Anseong Tangmyeon instant noodles, manageable for most diners without discomfort. The makguksu (buckwheat noodles) carries a round umami that is not spicy, providing a natural counterbalance to the heat of the dak-galbi, and adding udon or jjolmyeon as a topping is a worthwhile upgrade. The established finale is using the remaining sauce and a handful of cheese to make a fried rice that closes the meal on a rich, savory note. The dining room is spacious with comfortable gaps between tables, and wrapping dak-galbi in fresh lettuce leaves is a popular alternative to eating it straight.
