Pork belly cut 29cm long goes onto a hot stone slab in a two-floor spot in Pimatgol alley, about 5 minutes on foot from Jongno 3-ga Station. Staff grill it crisp outside and juicy inside, and it gets wrapped with grilled kimchi, bean sprouts and scallions. The Simin samgyeop half-pan set (450g) brings lettuce, house-made three-color kimchi and kimchi jjigae, a sharp stew softened by melted pork fat. Wagyu cheese fried rice comes last with a crisp scorched layer at the bottom. Upstairs, partitioned group tables suit company dinners, and at lunch the kitchen turns to ssambap (rice with leafy wraps).
