Running its conveyor belt in Samseong-dong since 2003, the shop also makes sushi to order: anything missing from the rail can be requested from the menu and arrives freshly made. Herring (cheongeo), flounder (dodari) and cuttlefish (gabojingeo) nigiri make a good trio for comparing oily fish, white fish and squid texture. Rice portions are small, which keeps the fish in front. Tako wasabi, octopus in wasabi, works between pieces, and udon, fried squid or shrimp tempura adds something warm. Wide family tables fill up on weekday evenings and weekends, when a wait is likely; valet parking is offered.
