Every fish served here undergoes an aging process, and the shiromi (white-fleshed fish) stands out with exceptional skill: clean and delicate yet carrying a depth of umami that raw fish alone cannot achieve. The tuna also performs at a high level, and the salmon is reliably good. The uni, being imported, may carry traces of alum flavor, an unavoidable compromise, while the ikura rates as solid if unremarkable. The shari rice leans slightly sour, which initially catches some diners off guard, but paired with the aged fish it reveals itself as a deliberate and refined choice that creates genuine harmony on the palate. Portions appear modest at first glance but accumulate quickly — neighboring tables regularly comment on feeling overly full by the end. Care is visible in every detail, from the clear soup to the vegetables arranged atop the chirashi bowl. Because the husband handles the kitchen solo, food emerges slowly during busy periods, so scheduling generous time for the visit is wise. The wife manages the floor with a natural warmth that makes first-time visitors feel like regulars. Reservations are required for parties of two or more, while solo diners can walk in but may wait. Booking a day in advance is usually sufficient. No alcohol is served, which creates an atmosphere focused entirely on the food. Ample parking makes driving the recommended approach.
