Seorak Hoe Guksu 설악회국수

Two people who order one hoe-guksu and one ojingeo sundae (stuffed squid) usually get the noodles split into two bowls by the owner, who says the portion is too big for one. With 15 to 20 slices of flatfish on a single serving, close to a whole fish, that is fair. Hoe-deopbap, the rice version, comes with a tart pomegranate chili sauce, and winter adds gomchi-al-tang, snailfish roe soup. The broth for the janchi-guksu is simmered at home by the family.
