Every plate on this third-floor Itaewon menu is vegetarian, built from rice and lentil batters, vegetables, potatoes and paneer cheese, and plenty of two-person tables make solo visits easy. The masala dosa can be ordered by crispness; medium gives a shell that cracks outside while the folded center stays chewy. Dip it in turn into cumin-scented sambar, coconut chutney and the green and red sauces. Palak paneer, cheese cubes in a smooth spinach sauce, goes well with butter naan, while kadai paneer brings much sharper heat.
