From the top floor of the L'Escape Hotel, the windows look over the Namdaemun skyline while an eight- to nine-course tasting menu unfolds. The Michelin-starred kitchen applies classic French technique to Korean seasonal produce, with plates such as black truffle deodeok veloute (deodeok is a mountain root), cod stuffed with Taean mussels, and lobster minestrone rotating by season. The amuse-bouche arrives as a rose-infused tart set on an opened pop-up card. Each table gets a letter-style menu with the guests' names, and departing diners receive madeleines shaped like walnut cakes. Mention an anniversary in advance and the dessert is styled for it.
