The seasoning carries mild heat and salt rather than the sticky sweetness associated with Korean glazed chicken. Adding gravy changes the fried surface by soaking some sections in a salty, savory sauce while other edges remain crisp. This allows soft, sauce-covered bites and dry, crunchy bites to come from the same plate. The chicken sandwich combines fried chicken, bread, and sauce in a handheld structure. Bread adds more volume and makes the sauce a larger part of each bite than it is on the plain fried-chicken plate. Chicken and rice separates the pieces of chicken from a mild grain base.
