Soybean-paste broth bubbles away at the table, savory but never sharp with salt. An hourglass timer on each table marks when the hot pot is ready to eat. Besides the beef-belly hot pot (sogogi samgyeop doenjang jeongol), versions with pond snails, clams or beef tendon are on the menu, and kalguksu noodles finish the leftover broth. A thin squid and water parsley pancake (ojingeo minari-jeon) stays crisp to the last bite and goes well with Neurinmaeul makgeolli. Lunch specials are discounted, and groups of three or more who reserve sometimes receive fried seaweed chips. The room is large with generous spacing, high chairs and separate rooms are available, and cars can park out front. Stir-fried kimchi, scallion kimchi, a fried egg and seasoned laver come as standard sides, with free rice refills.
