Maga Mandu is a Chinese-style handmade dumpling shop in the Chinatown alley across from Busan Station, run by owner Ma Wi-hong, a Chinese-Korean recognized as a fried dumpling master on SBS television's Master of Living. The restaurant's name, Maga (馬家), comes from the owner's surname. Although the nationally famous Sinbalwon sits right next door, Busan locals often rate Maga Mandu higher. Three types of dumplings are available — steamed, pan-fried, and boiled — with the steamed version earning the most praise. The skin is thin and the filling well-proportioned, releasing a gentle rush of savory juice on each bite in a manner that rivals xiaolongbao. Pan-fried dumplings deliver a satisfying contrast of crisp shell and moist interior, while the boiled variety leans toward the rich, hearty profile of Dongbei-style Harbin dumplings. The steamed dumplings carry a slight spice aroma that may divide opinions, but the pan-fried version is broadly crowd-pleasing. Beyond dumplings, the menu includes Chinese dishes such as sweet-and-sour pork with no trace of gamey flavor, fried chicken in chili sauce, jjamppong rice with a mild rather than aggressive heat, and mapo tofu rice. The jasmine tea is also notably fragrant and well-prepared. Seating is generally available around noon, though a queue tends to form by the end of lunch service. The Chinatown setting adds atmosphere to the meal, and the location within walking distance of Busan Station makes it a practical first or last stop on a Busan trip. Portions relative to price lean on the smaller side, so sharing multiple varieties across the table is the most efficient approach for groups wanting to try everything.
