Kawakatsu 카와카츠

Kawakatsu is a Japanese-style tonkatsu restaurant in Hapjeong-dong, Mapo-gu, Seoul, recognized as a Michelin Bib Gourmand selection for multiple consecutive years. The kitchen uses a sous-vide-then-fry technique that produces remarkably even doneness throughout each cutlet. The cross-section may show a faint pink hue, but the meat is fully cooked and exceptionally moist. Individual pieces of the rosu-katsu are cut larger than at most competitors, resulting in generous overall portions. The defining element is the dipping combination of Himalayan salt and rosemary olive oil. The aromatic rosemary lifts each bite and keeps the richness surprisingly restrained, an experience rarely replicated at other tonkatsu establishments. The cabbage salad arrives dressed with a tart yuzu vinaigrette that cleanly counterbalances the fried pork, and the accompanying rice is of notably high quality. Thoughtful touches such as jalapenos and pickled radish further help manage richness. The menu extends beyond the standard rosu to include yurinchi-katsu and hire-katsu among other options. The restaurant occupies a narrow, deep space reminiscent of a late-night izakaya, and while seating numbers are higher than the exterior suggests, dinner-hour waits remain common. Reserving a spot via the Tabling app is recommended. The floor can become slippery from frying oil, and some visitors note limited ventilation. Branches exist beyond the Hapjeong flagship, though the consensus favors the original location for the best execution.
