Hongcheon Hanu Jikpanjang (주)홍천한우애직판장

Hongcheon Hanwoo Direct Market is a butcher shop and restaurant at 12 Yangjimal-gil in Hongcheon-eup, Hongcheon-gun, Gangwon Province. Diners choose the cut and quantity at the attached meat counter before entering the dining room. Individual options include sirloin, striploin and Korean butcher cuts such as buchaesal and jebichuri, while assorted packs combine several cuts in one purchase. Diners pay for the meat at the butcher counter first, carry it into the restaurant and grill it over charcoal with a separate table setting. A self-service bar inside the dining room supplies vegetables and banchan to accompany the grilled beef. The Hanwooae samhap set combines thinly sliced beef short plate, pen shell and shiitake mushrooms for grilling together. Other Hanwoo dishes include yukhoe mulhoe, raw beef served in a cold broth, and a soup made with Hanwoo offal. Mushroom bulgogi hot pot and beef brisket doenjang hot pot are both shared dishes ordered for at least two people. The rice selection includes stone-pot bibimbap with doenjang jjigae, yukhoe bibimbap with doenjang jjigae, and Hanwoo gukbap. Two ten-piece sushi dishes use seared Hanwoo and raw Hanwoo sashimi respectively. The noodle menu distinguishes Hanwoo yukhoe bibim naengmyeon, Hamheung naengmyeon with seasoned pollock, standard Hamheung bibim naengmyeon and Hamheung mul naengmyeon. Mul naengmyeon and bibim naengmyeon are also available as separate after-barbecue orders. Beef brisket doenjang jjigae is a separate meal dish, distinct from the shared brisket doenjang hot pot. Outdoor seating provides another dining area in addition to the indoor room. The format keeps every stage in one place: select and pay for the beef by cut, grill it over charcoal, then add rice, soup, stew or noodles from the prepared menu.
