Front-leg pork goes into the bossam here, so each boiled slice carries both lean meat and a strip of fat, while the jokbal (braised pig's trotter) is seasoned with soy sauce right through the skin. A combined bossam and jokbal set covers both. House-made kimchi and spicy shredded radish come with the meat, along with salted shrimp and ssamjang for lettuce wraps. It suits a group sharing platters over soju or makgeolli in Yongsan.
