Indongju Maeul is a traditional Namdo cuisine restaurant on Boksan-gil in Mokpo, Jeollanam-do, specializing in hongeo samhap (fermented skate, boiled pork, and aged kimchi) and ganjang gejang (soy-marinated crab). The building was recently reconstructed, leaving both the exterior and interior in clean, modern condition, and a dedicated parking lot sits in front of the restaurant. The signature hongeo samhap is available with two types of skate: domestic Heuksando skate and imported skate. Only the domestic variety allows diners to choose the level of fermentation. Heuksando hongeo has a relatively mild fermentation intensity, making it approachable for first-time skate eaters, while the imported option delivers a stronger ammonia-forward flavor for those seeking a more intense experience. The full-table set meal, priced around ninety thousand won for four, includes hongeo samhap, ganjang gejang, boiled pork, and an abundant spread of side dishes, with additional diners charged just five thousand won each. The ganjang gejang is well-aged with a balanced soy brine that is neither too salty nor too bland. Among the side dishes, the blanched chives carry a notably deep flavor. The house-made indongcho dongdongju, a rice wine brewed with honeysuckle, is another highlight and pairs exceptionally well with the hongeo samhap. Indongcho Pyeonghwaju offers just the clear top layer of the makgeolli for a lighter drinking experience. The restaurant operates without a break between meals, making off-peak dining convenient. The strong fermented aroma inherent to hongeo permeates the dining room and may linger on clothing after the meal. Staff attentiveness has been noted to vary somewhat depending on the time of visit.
