A single slab of brisket, about the size of a basketball player's palm, fills the bowl when you get the special (teuk) seolleongtang. Rice is not served on the side: it comes already warmed in the broth by the torryeom method, with somyeon wheat noodles in seolleongtang and glass noodles in naejangtang, the offal soup. The broth is only lightly seasoned, so add scallions and pepper to taste. Kimchi and kkakdugi share one seasoning, and the sour kimchi suits the heavy broth. Running since around 1977 near Euljiro 3-ga, the shop has a strong offal aroma at the entrance. It is a 3-minute walk from Exit 1 of Euljiro 3-ga Station.
