The rice under the sushi is pressed so loosely that grains can scatter on the way to the soy sauce. On top sits a thick slice of live fish, and you taste the fish far more than the rice. After the meal, diners climb to an unstaffed cafe on the second floor to brew their own coffee, and in the evening the terrace looks out on the sunset.
