Hongseongbang 홍성방

Hongseongbang is a Korean-Chinese restaurant on Hamo Hanggu-ro in Daejeong-eup, Seogwipo, Jeju. A sign using Chinese-style lettering and color faces the street near Hamo Port. The principal seafood jjamppong places a whole flower crab over noodles and fills the bowl with seafood and vegetables. Strong wok heat enters the broth without turning into an artificial burnt taste, while black pepper and chili create a light prickling sensation. Red chili oil does not form an excessively heavy layer, leaving the clean flavor extracted from crab and other seafood visible in the soup. The flower crab contributes more to the stock than to a large quantity of meat, and its hard shell contrasts with the soft noodles beneath it. Meat jjamppong adds pork and ginger, giving the bowl a warmer, sharper aroma than the seafood version. Jjamppong-bap replaces noodles with rice grains that absorb the liquid and retain a different structure. Tangsuyuk covers large pieces of fried pork with a high mound of finely sliced raw onion. The onion is cool, crisp, and moist without harsh pungency. Its sauce is sweet but relatively light and avoids a gluey finish, loosely coating both the fried meat and vegetable strands. Chili shrimp uses prawns approximately two or three finger joints long under a thin, crisp batter. Dense springy shrimp separates cleanly from the fragile coating, and the red sauce balances sourness, heat, and sweetness. Jajangmyeon also contains abundant seafood, with shrimp and squid visible through the black-bean sauce around soft noodles and onion. Small dishes before the meal, bone broth, additional banchan, and simple sweets after it create a broader table than one built around a single noodle bowl. The mild warm bone soup also offers a separate broth direction from spicy jjamppong. Near Hamo Port, crab, prawns, squid, pork, ginger, and onion move across soup, black-bean noodles, fried meat, and chili-coated seafood. The table is visually distinct: red crab jjamppong, tangsuyuk buried beneath white onion, large glazed prawns, and dark seafood jajangmyeon.
