Hongojip 혼고집

Hongojip is a solo barbecue restaurant at 1 Donggyo-ro 30-gil between Hongdae and Yeonnam-dong in Mapo-gu, Seoul. Its interior is organized around individual tables where one diner controls a grill and side dishes at a personal pace. Unlike a shared barbecue table, the order in which meat reaches the heat, the moment each piece is turned, and the final doneness belong to the person in that seat. Portion systems labeled 50/50/50 and 100/100/100 combine several cuts in defined small quantities. They allow one diner to continue through different meats instead of committing to a large plate of a single cut. The smaller sequence also reveals how quickly thin slices cook compared with thicker pieces. Wagyu is eaten with bean sprouts and fresh vegetables. Sprouts retain crispness while taking on rendered beef fat, setting their wet crunch against the browned surface of the meat. Yukhoe supplies cold, soft raw beef as a temperature change between items from the hot grill. Bibim-myeon pairs chilled noodles and spicy seasoning with cooked meat, while naengmyeon lowers the rich impression left after several fatty bites. Usamgyeop nabe places thin beef in broth, presenting the meat as a hot soup rather than another self-grilled portion. A diner unfamiliar with grilling can place one or two pieces down at a time and track color changes instead of loading the grate all at once. The cooking result consequently reflects the diner's timing, but the divided portions limit the amount at risk during each attempt. Food has sometimes taken longer than expected to reach the table. Once the place setting is complete, however, the individual format removes any need to match another person's eating speed or preference for doneness. Meat, yukhoe, noodles, soup, rice, and a drink can be combined at one station without ordering for a larger party. The restaurant uses physical layout and portion size to adapt Korean tabletop grilling, a meal commonly shared, to a single diner while retaining the act of cooking each piece over direct heat.
