Heukdon 흑돈

Heukdon means black pig, but here it refers to Spain's Iberico breed rather than Jeju black pork. The grill set brings cuts with different grain together, including flower neck, kkotsal, rib meat, belly-side meat and hwangjesal, while pork neck and pluma are sold on their own. A staff member explains the cuts and grills the first piece; the rest is up to you. Seasoned sushi rice comes on the side, and a small ball of it topped with grilled pork becomes a bite of meat sushi.
