The kitchen specializes in fish grilled in a 500-degree wood-fired oven paired with stone-pot rice courses served as a full Korean table setting. The extreme heat of the oven renders excess oil from the fish while keeping the flesh moist, and the result is a clean, virtually odorless grilled fish that appeals even to diners who normally avoid seafood. Galchi (hairtail) arrives in generous portions with a balanced, non-salty seasoning; godeungeo (mackerel) and samchi (Spanish mackerel) both achieve a crisp exterior with tender, juicy interiors. An induction plate at the table keeps the fish warm throughout the meal. The sotbap (stone-pot rice) menu offers galbi, abalone, eel, and gondeure options. The galbi version infuses slow-cooked beef flavor into each grain, producing a deeply savory, slightly toasted rice that stands on its own; the abalone pot is generously loaded with fresh abalone. Seasonal varieties rotate throughout the year. After the main course, the remaining rice crust can be turned into nurungji and enjoyed as sungnyung (toasted rice tea), and a glass of citrus juice arrives as dessert.
