Tori paitan pairs that rich yet clean-tasting chicken broth with firm, square-cut house noodles. Saba shoyu ramen builds on clear chicken stock with a mackerel soy tare and caramelized onion, though the mackerel itself stays in the background. Toppings are lean chicken breast, torch-seared thigh, a soft-boiled egg and a generous pile of menma. Extra noodles, half or whole portions, are free, and a rice refill comes topped with meat.
