Hakuten 하쿠텐(白天)

Long-simmered pork bones give the tonkotsu ramen a milky, savory broth without a heavy odor. Noodle firmness is set when you order, anywhere from firm to soft. Tender braised chashu comes in the bowl, and a soft-boiled egg or seaweed can be added. Gyoza, pan-fried dumplings, are the side dish. The Yeonnam-dong shop has few seats, so meal times can bring a wait.
