Only flatfish goes into the gwangeo mulhoe, a chilled raw-fish dish in a sweet-tangy broth, and the slices are generous. Seaweed soup and a thick vegetable jeon land first, followed by boiled pork, somyeon noodles and rice. That jeon is crisp almost like tempura, and filling up on it leaves little room for the rest.
