Guam Makguksu 구암막국수

The buckwheat is ground in the shop before the noodles are pressed, giving them a slightly rough surface and a springy bite. Pick from mul makguksu in cold dongchimi broth, sweet-sour bibim makguksu, or myeongtae-hoe makguksu topped with seasoned pollack, and add a crisp buckwheat pancake to go with it. Gapyeong pine-nut makgeolli is on the menu as well, and some customers make an afternoon drink of it with noodles and pancake.
