One plate of al-deungsim holds pork loin, gabrisal (the fatty cap near the shoulder) and belly, which makes the difference in fat and bite obvious. The pork comes from highland-raised pigs, and staff grill it over charcoal while explaining which piece to eat first. For beef, there is yakiniku-style marinated 1++ hanwoo and chadol yukhoe ssam, raw beef and thin brisket wrapped together. Sides continue with truffle steamed egg, herring-roe fried rice and hanwoo doenjang stew. A thick soft-tofu stew starts the meal, and the bibim naengmyeon, topped with seasoned greens, tastes unlike typical barbecue-house noodles. Highballs and Busan's Daesun soju are on the drinks list. Seasoning runs salty for light eaters, and waits are common near Mapo Station.
