Gamkkot Maeul Tojong Sundae 감꽃마을토종순대

The sundae here is handmade rather than the common glass-noodle kind, and ordered on its own it comes with makjang, a fermented soybean dip. The bone broth looks cloudy but tastes clean, and the generous pork offal carries almost no gamey smell. Stir the seasoned chives served on the side into the gukbap and adjust with red pepper paste or salted shrimp; kimchi made with Korean chili powder is at the self-serve bar.
